Squid Crackers

Ingredients

KANTIL flour 800 gr
MELATI flour 200 gr
Granulated sugar 100 gr
Powdered milk 50 gr
Bread improver 4 gr
Instant yeast 15 gr
Egg yolks 4 pieces
UHT milk 150 ml
Cold water 350 ml
Margarine 130 gr
Salt 4 gr
Crumb softener 20 gr

 

Filling Ingredients:

Cheese filling 500 gr
Sweetened condensed milk 75 gr
Powdered sugar 125 gr

 

Dough Ingredient:

Bread dough 150 gr
KANTIL flour 75 gr
Butter 150 gr

 

Topping Ingredients:

Cheese filling 150 gr
Rice flour 35 gr
Baking powder 3 gr
UHT Milk 75 gr
How to Make:
  1. Filling: mix all ingredients until well combined, set aside.
  2. Dough: mix all ingredients until well combined, weigh the dough 15 grams each, set aside.
  3. Topping: mix all ingredients until well combined, set aside.
  4. Bread: combine all dry ingredients except salt, mix well, add egg yolks, UHT milk, and water, mix until the ingredients are well combined and elastic.
  5. Finishing: weigh the bread dough 50 grams, add the filling, round it up. Wrap it with dough, place it in a baking pan, brush the top with the topping mixture.
  6. Proof for 60 minutes or until fully expanded. Bake at 190°C for 10 minutes or until done.
